Picky Kids’ Corner

Webster’s dictionary should have a word for the feeling of satisfaction you get when you’ve tricked your picky child into eating something healthy. I get that feeling all the time and it feels great! As a previous picky eater, I have some sympathy, but that is greatly overpowered by the frustration I’ve felt when the day is almost over and not one bite of vegetable has entered my child’s body. We’ve yelled, given punishments, made deals, but the easiest and most effective method that I’ve found is through trickery. Sneaking in healthy foods here and there until they get used to those flavors.  We’ve all heard that it takes up to twenty times of tasting a new food (that’s not so tasty) until you can get used to the taste and add it to your repertoire of palatable foods. I tried explaining that to my daughter at 4 and she didn’t care. All she knew was that the broccoli tasted bad then and she never wanted to eat it again. At that time the vegetables that my children, who were 6 and 4, were willingly eating were probably only peppers, cucumbers, and snow peas. -All raw, and for my son, dipped in ranch dressing. At least I had that. Plus eating them raw added more vitamins and was easy, but I wanted more. I had made a stir fry with peppers and snow peas that my son loved. It was pretty simple, the snow peas I chopped into three or four small pieces and I also added chopped onion, garlic, ginger and soy sauce. I made this several more times and then gradually started adding other vegetables like carrots, broccoli, sugar peas and cabbage. I had other dishes that I was slowly transforming, plus my soups. I am proud to say that my 13 year-old son has graduated from the picky kids’ corner.  He happily eats all sorts of vegetables and other foods, and is not afraid to try something new. My daughter, who is 11, is making slower progress, but progressing nonetheless. I’ve created more deceptive recipes for her because she is a little more stubborn. I usually wait until she’s finished eating it to tell her what she ate. HeHe! I am compiling a list of these recipes for you to try to comment on. Tricky Tacos

I often make this at the same time that I’m making chili that has squash and red peppers because I can use the veggies that I’m chopping and the beef that I’m browning for both. (Some can always be frozen.) Or if we are having taco night, I use some of the pumpkin and black bean side dish as my secret taco ingredient. Prepare tacos as you normally would. I use the taco seasoning packet that you add a pound of ground beef, tomato sauce, and water to. I will brown the pound of ground beef, drain it and remove it from the pan. Then I will sauté some onion, half a red pepper, and about a cup of squash. If I have a beet, I’ll add a quarter or half of it. Once that is soft,  I will add a few spoons of salsa. Then I emulsify the mixture with my hand blender/emulsifier (you can use a blender or food
DSCN0223processor.) Then I add the beef, water, and can of tomato sauce. I usually have to add a little salt, cumin and chili powder because the packet isn’t enough now that the veggies were added. You can always add a quarter or half of a second packet of seasoning. I let this simmer for 15 minutes while occasionally stirring. I usually need to add additional water because of the extra veggies, so just keep an eye on it and add water as needed. The same process can be used with other vegetables. I find having at least one firm vegetable like squash helps to create a smooth sauce. Beans and veggies work well too. Pay attention to color and start out with less for the pickiest eaters.The same process can be used with other vegetables. ~ The first time I tricked my daughter, I told her afterward about the deception. The next time I made tacos she requested that I don’t add the veggies again because they tasted kind of funny (even though she ate three). I didn’t comply. I just made sure that this time I emulsified it completely. With all veggies hidden, she ate it and loved it. I continued with this method until one day I was making a quick after school meal and thawed some hamburger for tacos, but didn’t have time for the veggies because we needed to leave right away. My daughter said that they didn’t taste as good as they usually do. Interesting…
